Apulian cuisine has always been one of the most
important for the Mediterranean diet. Here, where "nature is colour", all the products
of the earth turn themselves into real excellent specialities.

The TRULLI&NATURA
Association, therefore, will take you through our oeno-gastronomic programmes,
to discover not only the artistic, cultural, historical, monumental and
environmental heritage, but also the genuine goodness of our local products.
Interesting is the wine tour through historical wine cellars made entirely
of stone, with basins
dug into the rock, ancient wine-presses and
majestic barrels, to appreciate and taste very good wines obtained from
selected grapes brought to the cellar by expert wine-growers who produce
vintage Apulian grape varieties such as "Negroamaro", "Primitivo
di Manduria", "Primitivo di Gioia del Colle", D.O.C. "Locorotondo".
Inevitable is the visit to the Oil-Mill
where the oil-mill owner will explain all of the transformation and working
phases from the collecting of the olives, still by hand, to the pounding time
under heavy stone or marble wheels and squeezing with the cold pressing phase,
to obtain a low acidity product of the finest quality.
A visit to a business that deals with sheep, goats and
cows farming, whose milk is transformed, inside the firm's cheese factory, into traditional, sound and genuine dairy products.
People continuously try to cultivate the union between
production and land resources. Actually the farm produces a typical Apulian
"Canestrato cheese", which is seasoned in rooms created in carso
subsoil.
This cheese is characterized by its very special taste
and fragrance, typical of our land. The dairyman will show us some production
phases to obtain "mozzarella
cheese", "cacioricotta
cheese", "caciocavallo cheese", "scamorza cheese",
"strong ricotta cheese" and many other specialities for us to taste.
From here, we will discover some local pasta factories’ "secrets",
such as the fresh "orecchiette" and "cavatelli" handmade
pasta. How to make the famous Apulian bread and all the other delicious
products such as Taralli, dried figs and
almond dry sweet biscuits.
